Wiener Schnitzel with Potato Salad

Wiener Schnitzel
Ingredients:
4 pork steaks or boneless chops or pork filet halved lengthwise and pounded thin
salt and freshly ground black pepper, mild paprika
1/4 cup all-purpose flour
1 large eggs, lightly beaten
3/4 cup bread crumbs
1 slice of lemon per plate
Directions:
pound the meat until just 1/4 inch thick with the flat side of a meat tenderizer.
Lightly season both sides and coat with flour then dip in beaten egg and coat with bread crumbs
heat oil and fry until golden brown and cooked true about 5 min on each side.
Potato Salad
Ingredients:
3 pounds small firm, yellow-fleshed waxy potatoes
1 medium yellow onion, chopped
3 - 5 pickles, chopped
2 tomatoes cut small and 1 hard boiled egg cut small
Fresh chopped chives for garnish
vinegar, salt and pepper, 1 cup chicken stock, olive oil, finely cut parsley
Directions:
Boil the potatoes in their skins in lightly salted water until tender.
Meanwhile mix the hot broth with vinegar salt and pepper to taste.
Add finely cut onions and pickles. Add the cooked peeled and cut in thick slices potatoes.
Add the egg last.
