Pork Tenderloin in Orange Pumpkin Spice Sauce

This is a seasonal dish and is usually served in fall.

Ingredients:

1/2 liter orange juice
Juice of 1 Lime or Lemon
1 pork tenderloin
3 tsp pumpkin spice
salt, pepper
25 grams butter
1 Tbs peanut oil
1 Tbs sugar, brown
1 Tbs soup stock
2 Tbs orange liquor (e.g. Cointreau)
2-3 Tbs mustard, hot

pumpkin spice (batch):

1 tsp ground ginger
1 tsp cinnamon
1 tsp allspice
1 tsp ground clove
1 tsp cayenne pepper

Directions:

Season pork tenderloin with salt and pepper and rub the meat with the pumpkin spice on all sides. Heat the oil and brown the meat on all sides.
Add orange juice and sugar, mustard, Cointreau and soup stock. and 1/8 l water. cover and cook for 30 min.
Reduce sauce in pan. Simmer and add spices to taste and reduce heat again, add cold butter and whisk until smooth.

Meanwhile, add butter to a pan and add thinly sliced apple rings and cook until soft. Serve with mashed potatoes.
